Chiang Mai Cocktails
Everyone has heard of a "Singapore Sling", one of the most famous cocktails in the World. Here we have some recipes for lesser known but equally delicious Chiang Mai cocktails, which utilize exotic tropical Thai fruits.
Lanna Sunrise
Many people enjoy an aperitif before dinner so you may want to give this a
try or make a whole pitcher and forget dinner.

Ripe mangos, peeled and sliced |

Lime or lemon juice |

Lemon or lime slices for garnish |
Bung the lot into the blender and whiz until all the ice is crushed. Pour into a nice glass and garnish with a lemon or lime wheel
Chiang Mai Slammer
Yet another way to put off making dinner.

Small ripe Papaya, peeled, seeded and chopped |

Sugar syrup (See below) |

All goes in the blender until ice is crushed and all the fruit liquifies.
Sugar Syrup
In a sauce pan place 250 grams or 8 ounces ( 1 cup ) of sugar and 300ml or 1/2 pint water heat and stir until all sugar is disolved.
Let cool before using
